FRESH MANGO AND CORN SALAD WITH ZESTY LEMON DRESSING
- 1 Mango peel, pitted and diced
- 1/2 Onion cut into thin slices
- 1/2 Bell pepper (choice of your color red, green, organe& yellow. I used green bell pepper)
- 1 cup Cherry tomatoes halved
- 1/2 Cucumber cut into a small dice
- 1 Ear fresh corn husked(cooked)
- Minced fresh cilantro
- 1 Lime
- Grated zest of 1 lime
- 2Tbps Fresh lime juice
- black pepper
- 2Tbps Olive oil
- Kosher salt (Add according to your taste)
- Take a big bowl, cut the corn kernels from the cob. Combine corn kernels and remaining vegetables into the bowl.
- Now, Add dressing and mix well. Serve immediately or cover and refrigerate until ready to serve. Enjoy!
